Spicy Italian Meatballs – slow cooker recipe!

Monday I wrote a post called Paleo Summer Recipe Roundup. It featured many wonderful recipes: smoothies, salads, brussels sprouts, pina colada chicken, and many others from around the Paleo web :)

It’s not pleasant to cook over a stove or bake in the oven because our whole little apartment heats up! One appliance you can use without worrying about using excessive heat is a slow cooker! Today I have one of my best slow cooker recipes to share with you!

About a month ago, I told you guys about an opportunity I had to contribute to a larger food blog. Life Updates & Homemade Pizza

This poor little blog has been ignored this month. I’ve managed to write one post a week, and this week will be the first one in a while where I can squeeze in two whole posts :) I hate not being able to write three or four posts a week. Writing is good for the soul, and I’ve really missed my blogging community!

So what’s been keeping me from Happy Eater?

Ryan and I have been house hunting for the past four months, and last weekend we closed on our new house! I’ll have more pictures in a few weeks when we’re fully moved in and decorated. For now, I’ll leave you this picture of our first day in the house…sans furniture.

In addition to the house hunt, I was also looking for a job. Trying to find a job out of state is no fun, and the lack of future employment was beginning to weigh on me heavily. Fortunately, this past weekend also involved a job fair, and I was offered a position teaching middle school social studies!

There are so many wonderful things happening in our lives right now, and I am so grateful for the fortunate position we’re in now!

Homemade BBQ Chicken Pizza

Now that we’ve been able to put some stressful decisions behind us, I’m able to focus a little more on my blog and cooking again! But I’m a little out of practice when it comes to meal planning. When I’m at a loss for low carb dinner ideas, homemade pizza is always a perfect choice! Tonight I was feeling like bbq chicken pizza!

I bought Ryan a regular pizza crust from Sprout’s. I made myself a low carb crust from Jorge Cruise’s cauliflower pizza crust recipe.

For the pizza toppings, we had chicken tossed in Austin’s Own bbq sauce, sliced red onions, sliced mini bell peppers, mozzarella, and pepperoni.

Paleo Summer Recipe Roundup!

Welcome to this fabulous Paleo summer recipe roundup!

Poor April. This month has no blog love! This past month has been incredibly stressful, but this past weekend allowed for a lot of things to fall into place. More on that another time :)

Now that the temperatures are reaching the 80s everyday, I’m less inclined to turn on my oven. Our little apartment heats up really quickly in the summer, so anything that requires oven use for more than 20 minutes will likely be avoided.

Why “Bikini Body Ready” Programs are Not Okay

This is the first post I’ve written in a week! Ryan and I have been SUPER busy in these last couple of weeks, so blog posting has gone to the wayside. Now that my grad school program is finishing up for the semester and some of our grown-up obligations are being fulfilled, I have time to return and post about the things that make me happy :) Today’s topic falls under one of my favorite categories: body image.

Just Say “No!” to “Bikini Body Ready” Programs

Now that we’re well into Spring and on our way to summer, I’m seeing the annual “Get Bikini Ready!” blog posts and web articles. These articles usually include tips like: cut sugar! cut bread! sweat a ton to lose water weight! cut just 500 calories a day! take supplements!

There are a few things wrong with this kind of yearly call to action.

  • It assumes that you feel the need to change. You already look GREAT in a bikini. You don’t have to change yourself simply because the calendar pages are moving forward.
  • It assumes that there is only one way people should look in a bikini.

  • For whom am I supposed to be changing my body? Think about it…shouldn’t it just be about you and how you feel in your own skin? My husband loves me all year long, not just during bikini season. He’s happy with me year round. I’m happy with me year round. Why does anyone else’s opinion even matter?
  • Whether or not I personally feel bikini ready (which just sounds so silly) is no one’s business but my own. POPSugar, Nike, Weight Watchers, and everyone else professing this “bikini body” nonsense should just stay out of it.

There is a constant influx of media concerning the way women look. Yes, everyone should strive to feel happy and healthy, but we don’t need profit-driven businesses telling us how to eat or how to look. We’re fine the way we are, thank you.

love yourself first and everything else falls into line

I’ll say it again: any and every woman can ROCK a bikini. You do not need to crash diet and change around your whole schedule to look a certain way. Do you want to eat healthier to feel better? Awesome. Do you want to work out more often to feel strong? Cool. Should you do these things to look a certain way in a bathing suit? Nope. I personally don’t believe that’s a healthy mindset. The cold water and fresh sunshine on a beautiful beach won’t care about your bathing suit.

I’m all for wanting to improve oneself in the name of health, so be sure whatever regimen you have is safe, healthy, and just right for you!
